Lettuce is at peak right now. We must discuss it. If you don’t have lettuce in your crisper in June, you’re missing out on one of the most important abundances of the harvest.
Storing lettuce
It is hard to store lettuce. Pick it and the clock is ticking. You will throw away lettuce, sometimes lots of lettuce, because lettuce never cares about your scheduling. I always immediately throw it in a zipped plastic bag with a dry paper towel, which for some reason soaks up the excess moisture and keeps things from going brown as fast.
Usually I discard the outer leaves before working with the rest, and then I go ham on the salad spinner. Bugs! Dirt! Sundry bacteria! It must all go down the drain, where it belongs. There is no such thing as a well-built, easy-to-use, non-bulky, cleanable salad spinner. Leafy fools of all kinds laugh at your attempts to simplify your life. The Oxo one is… fine. If someone ever comes to build a better one, I will pay them for it.
