Bison chili: the latest iteration
So we’ve already established that I am lousy at recipes? I basically kitchen-witch the whole thing. The only two good things that I’ve ever done are bison chili & brown butter maitakes, and the latter just involves thermonuclear heat, brown butter, and black pepper. You can do this. People do this.
With that in mind, here is bison chili. I suppose I am known for bison chili now, which is weird because that makes me into a chili human, which I am not, because I come from no culture that does chili and this particular recipe offends all of them. I made it up in the kitchen on the fly, and it turned out so good that I have spent the past three years attempting to reverse engineer what I did. The recipe itself is maybe useless, but at least it exists as some sort of record of what I’ve done at least once.
What you need, in order of mise
- 4oz butter.
- 2lb ground bison.
