Italicus Flip
A flip is a genre of cocktail where you throw a whole egg in with everything, shake it bare to mix & form a merengue, and then shake with ice to cool the thing down.
The whole egg exists in defiance of god, and it is not optional. Your cocktail will not taste like eggs, thank you for asking.
My favorite gin-based cocktail is a flip, and it contains Italicus, an Italian bergamot liqueur. It is that rare cocktail that is perfect for summer or winter.
If you don’t have Italicus, substituting for St. Germain or Domaine de Canton would be nice, but they result in a vastly different cocktail.
Italicus Flip
- Whole egg
- 1oz lemon juice
- 1oz Broker’s or similar English gin
- 1oz Italicus
- Grapefruit, orange, cedar, or pine bitters
Combine everything but the bitters in a shaker. Shake bare. Add 6 ice cubes. Shake until cold. Strain. Top with bitters.
If you don’t have lemons on hand, get a 1oz silicone ice cube tray, buy a dozen lemons, juice them, strain through a chinois, and freeze 1oz cubes. Defrost for 15s in the microwave, then stir.
If you do have lemons on hand, a lemon twist would be a nice touch.
